Let’s bring some variety into the pancake-everyday! When we started brainstorming about Polish food, we immediately thought about pirogi and bigos. But since we already had pirogi-like dumplings called Varenyky and bigos is real meaty, we kept looking for the sweet stuff. And so we met racuchy, yeasted Polish pancakes. Since we leave out any egg, we have to go other ways in order to get those pancakes as fluffy as possible. We were pretty much in love as soon as we started eating. Mission completed!

Vegan Racuchy: Yeasted Pancakes

2 servings 50 minutes



  • 200 g (1-1,5 cup) all purpose flour
  • 1 pack dry yeast
  • 3 tbsp sugar
  • 0.5 tsp salt
  • 100 ml (0.4 cup) soymilk
  • 100 ml (0.4 cup) sparkling mineral water
  • 1-2 midsized apples (cut in pieces or slices)
  • oil or vegan butter


  • Icing sugar


  1. Take a bowl and start mixing all dry ingredients, that is flour, yeast, sugar and salt.
  2. In a small pan, heat up soy milk. It should not be too hot, so you should be theoretically able to put in your finger without burning yourself. Add to dry ingredients. The dough should now be clumpy.
  3. Little by little add sparkling water until your dough is a little bit sticky and viscous. We needed 100 ml for that, but you can of course use less or more.
  4. It's time to clean up windows or do the dusting in your flat, because now your dough needs to rest for 30-60 minutes. Therefor cover the bowl with plastic wrap and store it in a warm place. There should be bubbles on the dough's surface at the end.
  5. If your dough is ready, cut the apple into small pieces and stir them in carefully.
  6. Let's get a real big pan and heat up oil or vegan butter. Put some dough into your pan, you don't have to flatten it.
  7. Let it roast from both sides until golden, but keep it in the pan for 4-5 minutes at least, so your pancake is well-done and not raw at the end. So be careful with the heat. Continue with the rest of the dough and always add some more oil/vegan butter if needed, so it doesn't burn or stick to the pan.
  8. Serve with icing sugar. You can also serve it with caramelized apples or jam.

Of course you do not have to use apple slices, but can also eat your pancakes with berries, poppy seeds or leave it clean as it is. It will still taste great!
