Vegan Caramel

In love with vegan caramel! It’s crazy how many wonderful ingredients the world offers, and we don’t even know they exist. And when you finally discover them, you can’t image a life without. Do you know this situation? It’s a mess! Coconut sugar is one of the things. You can buy this special sort of sugar at organic chains or even in supermarkets. Coconut Sugar is way more expensive than the normal one, but it's worth it! Coconut sugar smells and tastes like caramel by nature, so it’s just the perfect ingredient for homemade, vegan caramel. As a basic recipe you can use it for a dip, sauce or whatever you want to call it. But it doesn’t matter cause you will get addicted to it. I swear!

Vegan Caramel

250 ml (1 cup)
15 minutes

Ingredients

  • 125 g (1.6 cups) coconut sugar
  • 120 ml (0.5 cups) coconut milk
  • pinch of salt
  • optional: 1 vanilla bean

Instructions

  1. Optional: Slice the vanilla pod and scrape out the seeds.
  2. Place all the ingredients in a pot or pan.
  3. Combine everything well and stir continuously.
  4. Let simmer for 10 minutes and set aside. Enjoy still warm.

This vegan caramel dip works perfectly on a cake or as a dip for vegan snicker balls or fresh fruits. The caramel gets thicker by the time, so use it still warm if you want to decorate a cake with it. The creme of the coconut can is essential for the consistency of your caramel dip. There is a firmer creme at the top of the can that works perfectly for a thick caramel creme.
