Vegan Pralines 101 - Basics & our Top 6 Recipes

You wouldn’t believe how easy it is to prepare vegan pralines yourself. But don’t worry, we’ll tell you today! They are especially great now at Christmas time, since this is a perfect gift for everyone. It’s easy, but your friends and family will still be impressed by this homemade present. Make sure to think about everyone’s taste and prepare the perfect pralines for each of them! They only like white chocolate? They love hazel nuts? Or almonds? We have something for everyone!

Molds

Ideally, molds for pralines should be made out of silicone. There are molds especially for pralines, but they are often quite expensive. Ice cube trays work just fine for this.

Chocolate

The darker the chocolate, the likelier it is that it’s vegan. Use rich, dark chocolate from the supermarket, that’s not expensive. If you want to use vegan white or “whole milk” chocolate, check out online shops or wholefood shops where you’ll find them.

Preparation

To melt chocolate, you’ll have to heat up everything in a bain-marie. Therefor you’ll need two pots, one slightly larger than the other one. Fill in water in the large pot (it’s enough if it’s filled with a quarter of water) and put the smaller pot on it. This is where the chocolate will get heated in. Be careful, that the chocolate does not get in contact with water directly or it will clump.

To melt chocolate real creamy, it’s always good to add some more fat. This can be vegan butter, but we love to use coconut oil. Plantbased milk is tricky, since we experienced some trouble with it ourselves. Experience a bit yourself to find your favorite way to melt chocolate.

Crispy Cookie Pralines

Vegan Crispy Cookie Pralines

12 - 15 Pralines
30 minutes (+ time to chill)

Ingredients

  • 5-6 oreo cookies (without the cream)
  • 150 g (5 oz) vegan dark chocolate
  • 1 tsp coconut oil
  • 3-4 tbsp glitter sprinkles

Instructions

  1. Separate Oreo cookies from Oreo cream. Put cookies in a lockable plastic bag and roll over with a rolling pin in order to crumble them. Of course you could also do this with your hands.
  2. Heat chocolate and coconut oil in a baine-marie. As soon as it is liquid, remove from heat and stir in crumbled Oreo cookies.
  3. Take out your pralines molds and start with sprinkles to cover the ground. Afterwards fill in your chocolate Oreo mix.
  4. Put it in the fridge for at least 3 hours (or just overnight). Afterwards, your pralines should be ready and crispy!

Vegan Coconut Pralines

Vegan Coconut Pralines

12 - 15 pralines
40 minutes (+time to chill)

Ingredients

  • 150 g (5 oz) vegan white chocolate
  • 3 tbsp coconut oil
  • 100 g (3.5 oz) grated coconut

ALSO

  • 100 g (3.5 oz) grated coconut to roll pralines

Instructions

  1. Heat chocolate and coconut oil in a baine-marie.
  2. When it's liquid, fill it in a bowl, add 100g grated coconut and stir well.
  3. Cool down in the fridge for 20 minutes, afterwards form small balls out of it and roll them in grated coconut again.
  4. Repeat until your whole 'dough' is fine.
  5. Afterwards let it cool in the fridge for at least 3 hours of overnight.

Vegan Hazelnut Nougat Pralines

Vegan Hazelnut Nougat Pralines

12 - 15 Pralines
20 minutes (+ time to chill)

Ingredients

  • 100 g (3.5 oz) vegan dark chocolate
  • 1 tsp coconut oil
  • 100 g (3.5 oz) vegan nut nougat spread
  • 100 g (3.5 oz) chopped hazelnuts

ALSO

  • 4 tbsp chopped hazelnuts for decoration

Instructions

  1. Heat chocolate and coconut oil in a baine-marie and add nut&nougat spread as well as chopped hazelnuts as soon as chocolate is liquid.
  2. Let it cool for 2-3 minutes, afterwards fill in pralines molds and sprinkle some more chopped hazelnuts on top.
  3. Afterwards let it cool in the fridge for at least 3 hours or overnight.

Vegan Almond Cranberry Pralines

Vegan Almond Cranberry Pralines

12 - 15 pralines
30 minutes (+ time to chill)

Ingredients

  • 100 g (3.5 oz) vegan 'whole milk' chocolate
  • 2 tbsp coconut oil
  • 50 g (2 oz) almond slivers
  • 50 g (2 oz) dried cranberries
  • 1 tsp almond flavor
  • 50 g (2 oz) chopped pistachio

Instructions

  1. Heat chocolate and coconut oil in a baine-marie until it's liquid. Then cool down for 2-3 minutes.
  2. Stir almond slivers, dried cranberries and melted chocolate and add almond flavor.
  3. Let this cool down in the fridge for 10 minutes.
  4. Afterwards you'll be able to use a little spoon and create small piles out of it. Put them on baking paper or directly into small paper molds and sprinkle chopped pistachios on it.
  5. Afterwards let them rest in the fridge for at leat 3 hours or overnight.

Vegan Oreo Pralines

12 - 15 Pralines
45 minutes (+ time to chill)

Ingredients

  • 150 g (5 oz) vegan dark chocolate
  • 1 tbsp coconut oil

FOR THE FILLING

  • 12 Oreo cookies (only cream)
  • 50 g (2 oz) vegan white chocolate
  • 1 tsp coconut oil

Instructions

  1. Heat dark chocolate and coconut oil in a baine-marie.
  2. Now there are two ways to get pralines filled later. Number 1: Fill in liquid chocolate into your pralines molds, then turn over and let all surplus chocolate drip off. Make sure so put a bowl under it, so you can use all the chocolate again later on. Number 2: For me, it's easier to just add a small spoon of melted chocolate into a praline mold and cover the mold all over, yet leave enough space to fill it later.
  3. If you've covered all praline molds, cool down in the fridge for 30 minutes and prepare filling in the meantime.
  4. For the filling melt Oreo cream, white chocolate and coconut oil in a bain-marie and let it cool afterwards for 2-3 minutes. Check your pralines. If the chocolate all around has hardened, you can fill in cream-chocolate-mix but leave some space on top.
  5. Again, put it in the fridge for 30 more minutes. In the meantime, melt again the rest of the dark chocolate so it gets liquid again. Let it cool for 2-3 minutes.
  6. Now use this chocolate to cover your pralines and let them rest in the fridge for at least 3 hours or overnight.
  7. If you like, you can drizzle some more chocolate on them, when they are done.

Vegan White Chocolate Strawberry Pralines

Vegan White Chocolate Strawberry Pralines

12 - 15 Pralines
40 minutes (+ time to chill)

Ingredients

  • 100 g (3.5 oz) vegan white chocolate
  • 1 tsp coconut oil
  • 100 g (3.5 oz) strawberry marmelade
  • 1 tsp jelly sugar
  • 3-4 tbsp chopped pistachio

Instructions

  1. Heat 3/4 of white chocolate and coconut oil in a baine-marie and let it stand aside for a minute.
  2. In your pralines molds, add chopped pistachio to cover the bottom. Afterwards fill them half with melted chocolate and put it in the fridge for 20-30 minutes.
  3. In the meantime, stir strawberry marmelade and jelly sugar and heat it up in a sauce pan. Let it simmer for 3-4 minutes, and afterwards let it cool down for 5 minutes at least.
  4. Take out pralines and add strawberry marmelade mix to the top.
  5. Chop the rest of your white chocolate and add it on top.
  6. Cool down in the fridge for at least 3 hours or overnight.
