3 easy, vegan Pestos for your Summer!

We don’t make pestos very often. But actually there’s no reason for it, cause you can have your own pesto so easily. So today, we want to do a summer special for all the sad pestos that didn’t get enough attention from us. UNTIL NOW! We think that pestos deserve more than basil, dried tomatoes and cheese. So we invited cherries, edamame (yep, Julias idea), sweet potatoes, peaches and thyme and everything went very well. You can top your bread, your pasta or your soy steak with your own pesto. Isn’t that great?

Vegan Cherry-Walnut-Pesto

40 minutes

Ingredients

  • 150 g (5.2 oz) cherries
  • 50 g (1.7 oz) rocket salad
  • 15 g (0.5 oz) basil
  • 50 g (1.7 oz) dried tomatoes
  • handful walnuts
  • 3 tbsp vegan parmesan
  • 1 garlic clove
  • 5 tbsp olive oil
  • salt&pepper

Instructions

  1. Wash cherries, halve and pit cherries.
  2. Cop dried tomatoes.
  3. Peel garlic clove and cut in fine dices.
  4. Wash basil and rocket salad and puree all the ingrdients in a high container.
  5. Season with salt and pepper and more oil if needed.
  6. Store in refrigerator or serve immediately.

Vegan, Spicy Edamame Pesto

Ingredients

  • 150 g (5.2 oz) edamame
  • 1 avocado
  • handful cashews
  • 2 tbsp olive oil
  • 1 tsp wasabi
  • handful cilantro
  • 1 tbsp lemon juice
  • salt&pepper

Instructions

  1. Steam your edamame until done.
  2. Add all the ingredients in a bowl and puree until you get a smooth texture.
  3. Add more olive oil if the consistency is too sticky.
  4. Season with salt and pepper or more wasabi.

Vegan Sweet Potato-Peach-Pesto

40 minutes

Ingredients

  • 3 peaches
  • 1 sweet potato
  • 10 g (0.35 oz) thyme
  • 100 g (3.5 oz) pine nuts
  • 3 tbsp vegan parmesan
  • 3 tbsp olive oil
  • salt&pepper

Instructions

  1. Wash and dice your peaches.
  2. Peel, dice and boil the sweet potato until soft.
  3. Puree all the ingredients and add oil until the consistency is smooth.
  4. Season with salt and pepper.
