Silken tofu has the highest water content and a custardy texture. That's why silken tofu only contains 20% soybeans and not 50% than the regular firm tofu. It's a typical Asian specialty and works great in soups, creams, puddings, and sauces.

The Don'ts

Because of the high content of water, you should never try to cut, brown or fry silken tofu. It just won't work. Use silken tofu for blended foods and sweets, cause silken tofu is an excellent base for smooth textures and creaminess.

What to do with silken tofu?

1. Dips & Sauces

A perfect base for dips and sauces are cashews and silken tofu. It works superbly for pasta and BBQ dips.

2. Foamy Mousse

To get the silken tofu fluffy, just puree the mousse with an immersion blender for 2-3 minutes and add melted chocolate or whatever fits the recipe.

3. Cremes

Cream, gelatin, and eggs are often the base for cremes and desserts. If you avoid these items, you should get to know silken tofu.

4. Egg White

Replacing animal egg white is tough. At the moment we know two options to solve the problem. If you're looking for beaten egg white, go for Aqua Faba (chickpea water), but the only way to make fried egg white (for fried eggs) is by using silken tofu as a base!

5. Fillings

Silken Tofu also works great for hiding veggies in it, while used as a filling. Don't forget to season well and you can turn the wobbly tofu into savory quiches!
