Summer Swirl Smoothie
FOR FROZEN BERRIES
100 g (3.5 oz) blueberries 3 tbsp soy yoghurt
FOR YOGHURT LAYER
500 ml (2 cups) soy yoghurt 1 tsp maple syrup 1 lime (zest) 5 g (1 tsp) vanilla extract
FOR BERRY LAYER
250 g (9 oz) frozen berries 200 ml (0.85 cup) water 1 tbsp maple syrup
- For frozen yoghurt berries, prepare a flat plate by covering it with parchment paper. Fill soy yoghurt in a small bowl and dip blueberries one by one in it to cover them with it. Place yoghurt berries on the plate and put the plate in the freezer for at least 2 hours. Depending on your freezer’s power, time is relative here.
- For the first layer, mix soy yoghurt, vanilla extract and agave nectar in a blender or with a hand mixer. Pour in a vessel and refrigerate. For the second layer, purée frozen berries, water and maple syrup. Transfer to a second vessel and refrigerate as well.
- Once your frozen yoghurt berries are actually frozen, take a glas and pour in the light yogurt layer first and top with the berry layer. Using a spoon or fork, create a nice swirl in the smoothie. Serve with frozen berries on top. Cheers!
