Vegan French Onion Pasta

Normally, you'd use one, two, maybe three onions for a dish – but 700 grams? That's exactly why we love this pasta so much. In this French Onion Pasta, we use 700 grams of onions that we slowly caramelize in plant-based butter until they're sweet, soft, and golden brown. The smell alone makes us happy and transports us straight to a little bistro in Paris. And we promise: as soon as you cook this in your kitchen, it'll feel just the same.

The inspiration for the French Onion Pasta comes from the French onion soup ("Soupe à l'oignon"). It has its origins back in ancient times, was long considered a classic "poor people's food," and then made its way into French bistros, where it's now considered proper comfort food – served hot and topped with a thick layer of cheese. We thought: why not pack this flavor into a vegan pasta dish that's perfect for a cozy fall evening? The result is our French Onion Pasta – creamy, savory, full of umami, and at the same time, a little piece of Paris on your plate.

Before our pasta idea even came about, we naturally also tried the classic French onion soup – real comfort food for cold days. The base is simple but brilliant: caramelized onions, a hearty vegetable broth, a splash of white wine, and on top, a golden-brown baked bread slice with vegan cheese. The result is a soup that warms, fills you up, and at the same time has that unmistakable taste of sweet onion and savory depth. That's exactly the feeling we wanted to capture with our French Onion Pasta – just in noodle form.

Vegan French Onion Pasta

Ingredients

For the Sauce:

  • 700 g (1.5 lbs) onions
  • 1 tbsp plant-based butter
  • 1 garlic clove
  • 30 ml (2 tbsp / 0.25 cup) apple cider vinegar
  • 150 ml (0.66 cup) plant-based cooking cream
  • 50 g (1.75 oz) vegan parmesan
  • 2 tbsp nutritional yeast
  • 5 sprigs fresh thyme
  • salt
  • pepper

For the Topping:

  • 20 g (0.75 oz) pine nuts
  • 200 g (7 oz) smoked tofu
  • 2 sprigs fresh thyme
  • vegetable oil for frying

Additionally:

  • 250 g (8.75 oz) spaghetti
  • salt

Instructions

  1. Peel, halve, and slice onions into rings. Heat a pan with plant-based butter on medium heat. Add the onions and caramelize for approx. 30 minutes on low heat. Stir regularly so they don't burn.

  2. In the meantime, cook the pasta, but drain it 2 minutes before it's al dente. Catch one cup of the pasta water. Rinse the pasta with cold water and set aside.

  3. Toast pine nuts in a fat-free pan until golden brown. Cut smoked tofu into cubes and then fry in the same pan with a bit of oil.

  4. Peel garlic, slice it, and add it to the onions along with the apple cider vinegar, then caramelize for another 5 minutes in the pan. Then stir in plant-based cream, grated plant-based parmesan, nutritional yeast, and thyme leaves. Next, add the cooked pasta and mix. If the sauce is too thick, add some of the pasta water. Season with salt and pepper to taste.

5.Serve the pasta with fresh thyme leaves, toasted pine nuts, fried smoked tofu, and fresh pepper.
