Easy Vegan Apple-Nut Cake with Pudding

Apples are one of those foods you'll find in the supermarket in loads of varieties all year round. Their main season, though, runs from August to November. And even though they're THE quintessential fruit in Germany (on average, about 20 kilograms of apples are eaten per person each year, source: the German Federal Centre for Nutrition), we've only published two apple cake recipes on our blog so far: our sunken apple cake and our glazed apple cake. So it's high time for a new recipe — ideally as simple as possible.

This vegan apple pudding cake definitely falls into the category of: tastes like a lot of work, looks like a lot of work, but is actually super simple. And a little fun fact: Julia actually isn't a pudding fan at all. She's just not into that sweet, slippery texture so many people love — but even she enjoyed this cake!

What Makes This Cake So Simple?

  1. We use the same dough for both the shortcrust base and the streusel, so there's no need to make two separate doughs. For the streusel, we just set aside a small portion of the dough and mix in a few chopped nuts.

  2. The shortcrust dough doesn't need to chill forever. It just needs to sit in the fridge until everything else is ready.

  3. The cream is really just vanilla pudding — no agar agar or anything like that needed.

What Should You Watch Out for When Baking?

  1. We did try it without peeling the apples to make this recipe even easier, but it's worth peeling them — that way, they turn out nice and soft.

  2. When making the pudding, soy milk is your best bet. Yes, other plant-based milks can work too, but unfortunately not all of them. We tested several milk alternatives, and soy milk was the clear winner. If your pudding doesn't thicken while cooking, the cream won't set properly during baking either. That's because certain components in some plant-based milks (for example, the enzyme amylase found in some oat milks) break down the starch in the pudding powder.

  3. If you have a nut allergy, you can of course leave out the nuts and just use a bit more flour instead.

  4. And one more little tip: the more flavorful your apples, the tastier the cake will be. So go ahead and grab your all-time favorite apple variety.

Easy Vegan Apple-Nut Cake with Pudding

1 springform pan (Ø 26 centimeters / 10.25 inches)

Ingredients

For the shortcrust and streusel dough:

  • 400 g (3.33 cups) wheat flour (type 550)

  • 125 g (4.33 oz) ground nuts

  • 100 g (0.5 cup) raw cane sugar

  • 1 pinch of salt

  • 250 g (8.75 oz, about 2.25 sticks) vegan butter (cold)

  • approximately 50 g (1.75 oz) slivered or chopped nuts

For the pudding layer:

  • 74 g (2.66 oz) vanilla pudding powder

  • 750 ml (3.25 cups) soy milk

  • 4 tbsp sugar

For the apple layer:

  • 1 kg (2.25 lbs) apples

  • 1 lemon (juice)

Instructions

  1. First, for the dough, combine the flour, ground nuts, sugar, and salt. Add the cold vegan butter and work it into the flour mixture, ideally with cold hands, until a crumbly dough forms. Add cold water only if needed.

  2. Divide the shortcrust dough and press about two-thirds of it into the bottom and up the sides of a springform pan lined with parchment paper, or a greased and floured one. Mix the slivered or chopped nuts into the remaining dough, then place both in the fridge until the rest of the components are ready.

  3. For the pudding, first mix the pudding powder with the sugar and stir until smooth in a small amount of the soy milk. Bring the remaining soy milk to a boil, then remove from the heat and thoroughly stir in the powder mixture. Heat once more until the pudding reaches a thick, creamy consistency. Then set aside and let cool briefly.

  4. Peel and core the apples, then cut them into small pieces. Drizzle with lemon juice in a bowl, toss to combine, and set aside.

  5. Preheat the oven to 180 °C/355 °F (convection). Remove the springform pan with the shortcrust dough from the fridge and prick the dough several times with a fork. Spread the pudding over the dough, then distribute the apple pieces on top and gently press them into the pudding. Finally, scatter the remaining dough as streusel over the cake.

  6. Bake the apple cake at 180 °C/355 °F (convection) for approximately 50 minutes. Remove from the oven and let cool completely so the pudding layer can set. Only then dust with powdered sugar and slice.
