Vegan Granola with Mango & Coconut (in the Air Fryer)

We'll admit it: right now we're using our air fryer regularly for pretty much everything — from breakfast when we're warming up bread rolls, to evenings when we need a little snack and make dates in "bacon" wraps. Now granola is joining the lineup, and honestly, the rolls might just stay in the freezer for a while because we can't stop eating this. This mango granola is crunchy, fruity, chocolatey, and baked in under 20 minutes — by the time your coffee is ready and your skincare routine is done, so is the granola!

What makes this granola special?
Our recipe uses a simple basic mix of rolled oats, nuts, coconut oil, mango purée, and a little sweetness from agave syrup. Chia and flax seeds add a nice little omega-3 boost to your breakfast. After baking, everything gets tossed with dark chocolate, coconut chips, freeze-dried mango by Kluth, and a pinch of salt — a truly summery little breakfast dream, we'd say.

Freeze-dried mango might sound like a "nice to have," but it really does make a difference here. The freeze-dried mangoes by Kluth have an amazing crunch and an intense, aromatic flavor that makes the granola noticeably fruitier. And the quality is so, so good that you'll barely find any crumbles — instead you get lots of whole, crunchy pieces that don't turn to powder in the jar.

Which nuts work best?
You can swap the nuts freely — almonds, hazelnuts, pecans, or a mix all work great.

How long does the granola stay fresh?
Ours was gone after just a few days, but stored in a well-sealed jar in a dry place, your granola will stay crunchy for about 2–3 weeks. Let it cool completely after baking so no condensation forms — otherwise it'll go soft faster.

Do you need an air fryer?
No air fryer? No problem. You can make this recipe 1:1 on a baking sheet in the oven — just plan for a bit more time and patience for preheating, and stir occasionally so everything gets nice and crunchy.

To serve, all you need is some plant-based yogurt or milk and fresh fruit like banana, blueberries, or apple, and you've got a breakfast that makes you happy even after a long day. Vegan Granola with Mango & Coconut (in the Air Fryer)

Ingredients

For the basic mix:

  • 100 g (1 cup) rolled oats (alternatively: gluten-free oats)

  • 60 g (0.5 cup) nuts

  • 1 tbsp chia seeds

  • 1 tbsp flax seeds

  • 1 tbsp agave syrup

  • 25 g (2 tbsp) coconut oil

  • 50 g (3 tbsp) mango purée (or applesauce / 0.5 mashed banana)

Add after baking:

  • 30 g (1 oz) dark chocolate

  • 25 g (0.25 cup) coconut chips (e.g. by Kluth)

  • 15 g (0.5 oz) freeze-dried mango (e.g. by Kluth)

  • 1 pinch of salt

To serve:

  • fresh fruit and berries (e.g. banana, blueberries, apple, grapes …)

  • vegan yogurt or plant-based milk

Instructions

  1. Add the oats, nuts, chia seeds, and flax seeds to a bowl and mix together. Add the coconut oil along with the agave syrup and mango purée (or applesauce or mashed banana) to the dry mixture and stir everything together thoroughly.

  1. Spread the mixture evenly into the air fryer basket and roast at 180 °C/355 °F for approximately 8–10 minutes, stirring once after approximately 4–5 minutes to prevent burning. Keep an eye on the color: the granola should turn golden brown but not too dark.

  1. Remove the granola from the air fryer and let it cool completely so it gets crunchy.

  1. Roughly chop the dark chocolate and mix it together with the coconut chips, freeze-dried mango, and salt into the cooled granola.

  1. To serve, fill bowls with granola and fresh fruit and berries, then top with vegan yogurt or plant-based milk.

Tip: To make the granola gluten-free, simply use certified gluten-free rolled oats.
