Fall Tortellini Casserole with Caramelized Onions

As soon as summer starts winding down, we're secretly dreaming of hearty pasta casseroles that warm us right up. Casseroles are the ultimate comfort food for us, but we love a little twist too — special ingredients or a fun pasta shape. Back in our early vegan years, we used to eye store-bought tortellini enviously, since they only came filled with meat or cheese. Thankfully, that's long behind us, and more and more vegan varieties are popping up on the shelves.

Today, we're taking them on a little imaginary fall stroll through France. The result: our tortellini casserole in French onion style, with a creamy sauce, caramelized onions, smoked tofu, and a crunchy fried onion crust.

What Does French Onion Style Mean?
Our casserole is named after the classic French onion soup. We slowly sauté three onions over low heat until they turn beautifully golden, sweet, and mellow. Patience really pays off here! Together with dried or fresh thyme, vegan cream, and a splash of vegetable stock, that's what becomes the base of our sauce. The smoked tofu cubes take on the role of the bacon from the original and add a bit of savory depth. Then all that's left is to add the tortellini — and just like that, fall couldn't taste any better.

How Do I Get My Crust Nice and Crunchy?
A creamy casserole is great and all, but a little crunch makes it even better. So we treat our vegan tortellini casserole to a crust of shredded cheese, crispy fried onions, plus a small amount of panko breadcrumbs. If you don't have the latter on hand, regular breadcrumbs work just as well. A drizzle of olive oil on top, then under the broiler it goes. That's how the topping turns beautifully golden brown and crispy, no complicated tricks required.

Fall Tortellini Casserole with Caramelized Onions

Ingredients

For the casserole:

3 onions

2 garlic cloves

200 g (7 oz) smoked tofu

1 tbsp soy sauce

2 tbsp dried thyme

2 packages vegan tortellini (e.g. pumpkin and apple cappelletti by D'Angelo)

350 ml (1.5 cups) vegan cream

200 ml (0.75 cups) vegetable stock

1 tbsp cornstarch

For the crust:

100 g (3.5 oz) vegan shredded cheese

20 g (0.75 oz) crispy fried onions

30 g (1 oz) panko or breadcrumbs

2 tbsp olive oil

Also:

salt

pepper

olive oil for frying

fresh thyme, for garnish

Instructions

  1. Slice the onions into rings and finely dice the garlic. Cut the smoked tofu into small cubes.

  2. Sear the smoked tofu in a pan and season with a splash of soy sauce. Then remove from the pan.

  3. Caramelize the onion rings in olive oil over low heat, stirring occasionally, for 15–20 minutes, until soft and golden brown. Toward the end, add the dried thyme and garlic and sauté briefly.

  4. Preheat the oven to 200°C (convection, 390°F). Meanwhile, add the smoked tofu, tortellini, vegan cream, stock, and cornstarch to the pan and season with salt and pepper. Stir everything well and cook for 5 minutes. In a small bowl, mix the vegan shredded cheese, crispy fried onions, and panko with the olive oil.

  5. Transfer everything to a casserole dish, cover with the vegan cheese-panko mixture, and bake for 20–25 minutes at 200°C (convection, 390°F), until the tortellini are cooked through and the top is golden brown and crispy. Top with fresh thyme before serving.
