Vegan Baked Apple Crumble with Marzipan Crumbles

But here's why you'll still love our recipe for a vegan baked apple crumble: we basically just put all these different, wonderful flavors together in a new way. The apples are no longer hollowed out, but cut in smaller chunks and seasoned with wintery spices such as cinnamon and cardamom. The usual filling is transformed into crunchy crumbles that are almost granola worthy thanks to the added rolled oats. And because we don't want to give up on the vanilla part of the dish, we're serving the still warm crumble with a scoop of vegan vanilla ice cream that will slowly melt into kind of a sauce. Vegan Baked Apple Crumble with Marzipan Crumbles
Ingredients
For the Apple Layer
- 4 apples
- 1 tbsp ground cinnamon
- 1 tsp ground cardamom
- 2 tbsp ground almonds
- 1 tbsp lemon juice
- 1 tbsp orange juice
- 50 g (1.75 oz) dried cranberries
For the Streusel
- 100 g (3.5 oz) marzipan
- 50 g (0.5 cup) rolled oats
- 1 tbsp sugar
- 3 tbsp ground almonds
- 1 tbsp vegan butter
- 0.25 tsp salt
For Serving
- vegan vanilla ice cream
Instructions
Preheat oven to 180 °C / 355 °F (fan). Peel apples, cut into smaller pieces, and distribute in a baking dish. Sprinkle with cinnamon, cardamom, and ground almonds, and drizzle with lemon juice and orange juice. Add dried cranberries and mix everything together.
Pre-bake apples at 180 °C / 355 °F (fan) for approx. 20 minutes.
Meanwhile, prepare the streusel by combining marzipan, rolled oats, sugar, ground almonds, vegan butter, and salt in a large bowl until a crumbly dough forms.
Once the apples have softened in the oven, carefully remove the dish from the oven and distribute the streusel on top. Continue baking for approx. 10 minutes at 180 °C / 355 °F (fan) until the streusel is browned and crispy.
Remove the crumble from the oven and serve while still warm with vegan vanilla ice cream—that's when it's best!
