Vegan Baked Apple Crumble with Marzipan Crumbles

A steaming apple, slightly shriveled from the oven, crowned by a deliciously fragrant filling and a creamy vanilla sauce - that's just how we know and love baked apples. And that's everything today's recipe is not. Ha! Guess that was a tempting teaser for this recipe, wasn't it?

But here's why you'll still love our recipe for a vegan baked apple crumble: we basically just put all these different, wonderful flavors together in a new way. The apples are no longer hollowed out, but cut in smaller chunks and seasoned with wintery spices such as cinnamon and cardamom. The usual filling is transformed into crunchy crumbles that are almost granola worthy thanks to the added rolled oats. And because we don't want to give up on the vanilla part of the dish, we're serving the still warm crumble with a scoop of vegan vanilla ice cream that will slowly melt into kind of a sauce. Can you now forgive us for the mean introduction?

Vegan Baked Apple Crumble with Marzipan Crumbles

20 minutes (+ 30 minutes baking time)

Ingredients

  • 4 apples
  • 1 tbsp ground cinnamon
  • 1 tsp ground cardamom
  • 2 tbsp ground almonds
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • 50 g (2 oz) dried cranberries
  • vanilla ice cream for serving

For the crumbles:

  • 100 g (3.5 oz) marzipan
  • 50 g (0.5 cup) rolled oats
  • 1 tbsp coconut sugar*
  • 3 tbsp ground almonds
  • 1 tbsp coconut oil*
  • 0.25 tsp salt

Instructions

  1. Preheat oven to 180°C/355°F. Peel apples and cut into dices, smaller chunks or slices, then add to a baking dish. Sprinkle with ground cinnamon, cardamom and ground almonds and drizzle with lemon and orange juice. Add dried cranberries and stir to combine.

  2. Bake for approx. 20 minutes without crumbles to soften the apples.

  3. In the meantime, add marzipan, rolled oats, coconut sugar, ground almonds, coconut oil, and salt to a bowl and stir to combine until a crumbly dough forms.

  4. As soon as the apples are softened, remove the baking dish from the oven and sprinkle crumbles on top. Bake for 10 minutes longer, until the crumbles are golden brown.

  5. Remove from the oven and serve warm with vegan vanilla icecream on top!
