Vegan Kofta on Mashed White Beans

I love family-style dinners, where lots of different dishes are served, and everyone can help themselves to the dishes that excite them the most. This gives you the opportunity to try lots of different things, and the portion sizes can also be varied. What's more, all your invited friends can bring a dish, and you don't have the stress of preparing everything on your own. So it's simply G E N I U S in every respect!

Here's a little inspiration for you on what your guests could bring: How about Turkish rolled pastry with spinach, vegan quiche with feta, couscous salad, vegan cheesy garlic bread, vegan cream cheese logs oooor roasted broccoli salad with aioli dressing?

And these are exactly the reasons why you should invite your friends over and prepare vegan kofta with creamy mashed white beans. The dish is creamy, hearty, fresh, sweet, spicy, and sour; it's everything you need – combined on one plate. However, if you don't feel like inviting anyone over, this dish is, of course, also perfect for you alone.

What looks like hummus at first glance is a puree made from white beans, and the small meatballs are vegan kofta. The mashed beans contain fresh thyme, coriander powder and cumin, which really rounds off the relatively neutral beans. Before blending, we sauté the onions and garlic in lots of vegan butter, which adds even more flavor to them. If you want to shorten the process a little, you can use onion and garlic powder as an alternative. However, you should not leave out the vegan butter!

We top our kofta dish with roasted pine nuts, pomegranate, lemon zest, mint, chili and olive oil. If you don't like an ingredient, try not to simply leave it out but replace it with something else. For example, almonds would be a good substitute for pine nuts, and fresh cilantro would be a good substitute for mint.

But let's get back to the vegan kofta that have made themselves comfortable on the mashed beans. The fact that each kofta looks a little different and is not perfectly oval is because we formed them ourselves. Thanks to GREENFORCE, there are great vegan ready-made mixes that are simply mixed with water, then shaped and fried. It really is child's play and 100% guaranteed to succeed. The kofta and all GREENFORCE products, in general, are gluten-free and soy-free, contain no preservatives or flavor enhancers, and are high in fiber.

Vegan Kofta on Mashed White Beans

Ingredients

For the mashed beans:

  • 350 g (12.25 oz) white beans (from the tin)
  • 1 white onion
  • 2 cloves of garlic
  • 2 tbsp vegan butter
  • 10 g (0.33 oz) fresh thyme
  • 2 tsp coriander powder
  • 2 tsp cumin
  • 0.5 lemon (juice)
  • salt
  • pepper

For the topping:

  • 30 g (1 oz) pine nuts
  • 10 g (0.33 oz) fresh mint
  • 0.5 pomegranate
  • 2 tbsp olive oil
  • 0.5 lemon (zest)
  • chili flakes
  • salt
  • pepper

Additionally:

  • vegan kofta (e.g. from GREENFORCE)
  • flatbread
  • olive oil

Instructions

  1. Drain the beans in a sieve and rinse. Be sure to save the liquid from the can (the aquafaba).

  2. Peel and roughly chop onion and garlic. Melt vegan butter in a pan and sauté the onion and garlic until the onions are translucent.

  3. Pluck the thyme leaves and blend them together with the beans, garlic, onions, coriander powder, cumin, lemon juice, salt, and pepper in a blender until creamy. Season it with lemon juice, salt and pepper. For more creaminess, you can add some of the aquafaba.

Tip: If you don't have a blender, simply use an immersion blender.

  1. To make the topping, toast pine nuts in a grease-free pan. Wash and chop the mint. Remove the seeds from the pomegranate. Place all three ingredients in a bowl with olive oil, lemon zest, chili flakes, salt and pepper and mix together.

  2. Prepare the vegan kofta according to the packet instructions.

  3. Spread the mashed beans on a large platter. Place the vegan kofta on top and decorate with the pomegranate and pine nut topping. Drizzle with a bit of olive oil.

Tip: The flatbread can be baked in the oven at 150 °C / 300 °F (top and bottom heat) for approximately 5 minutes to make it warm and slightly crispy.
